Healthy Eating Options

Mexican Quinoa

(via Kitchen Simplicity)

Even though I posted about quick + easy healthy foods a couple of weeks ago, I’ve honestly been depriving my body of many necessary nutrients over the past two weeks. It’s so easy to get wrapped up in eating what’s fast, delicious, or the most appealing on a restaurant’s menu (particularly when my philosophy is that you should try not to order something that you could/would make yourself at home). While I’m not a health nut by any means, I sort of think I’ve hit “rock bottom” [a total exaggeration] with my current eating habits and am just really frustrated with myself for that. I don’t feel 100%, break out more, and am just generally less myself when I’m nomming on tempting but unhealthy foods.

As I’ve learned over time (with green smoothies being the ultimate example), good, clean food doesn’t have to taste bad (this is also evidenced by my fish tacos this weekend). I think by discussing healthy(ier) eating here, I’ll feel a little more accountable for what I consume. I’m going to make it a point to share some of the recipes I make in hopes that you’ll try them as well. For now, here are some things that I’m planning to make in the near future. Many are healthy takes on otherwise unhealthier foods, so there’s no sacrificing taste here! Just the way I like it.

Any recipes that you recommend? I’m trying to get into fancier salads more, but haven’t found many recipes that I actually crave. Tips are much appreciated!
