Happy Memorial Day Weekend, friends! As I mentioned yesterday, we’re switching things around a bit to share this perfect holiday weekend drink with you before you embark on whatever journey/jump into whatever plans you have for the long weekend. Are you headed anywhere exciting? The beach, perhaps? Regardless of where you’ll be –this girl’s staying in DC to eat, shop, and grill– MDW weekend kicks off summer with its BBQs, weekend trips, outdoor music, and of course, drinks.
Each year, there are several things I intended to do more of in the summer. The list includes regularly attending Jazz in the Garden, winery visits, weekend trips to new places, more concerts, and crafting more original cocktails myself. When you’re content with G&Ts all year around, it can be hard to get creative!
Blue Chair Rum is sponsoring Kenny Chesney’s Big Revival Tour and asked me to create a cocktail for his concert in Columbia, MD next week, which was a fun little exercise because having grown up in Texas, country music concerts are a standard summer activity for many (I’m sure this is unsurprising to most of you, but I’m happy to help clear up any particular stereotype questions people have. We don’t ride horses in the city, for starters). As I’ve grown older, I’ve come to appreciate spending summer nights outside with a couple of cold, seasonally-spirited cocktails. Extra perks for ones that don’t require elaborate or unusual ingredients. Rum, pineapple juice, seltzer, lime, and mint on the other hand? This one’s probably going to be a regular around here…
Ok side note: seltzer is one of my favorite things ever. I used to hate it and one day, someone insisted I give it another shot, I took a sip, and everything changed. Isn’t that weird? Now I can’t get enough of it and because I nearly all think cocktails taste better with a little carbonation, needed to find a way to incorporate it into this recipe.
Pineapple Rum Mint Spritzer
Makes one drink
6-7 oz pineapple juice
3 oz seltzer
3 oz rum (I used Blue Chair Bay white rum)
Approximately 5 mint leaves, crushed
1/2 lime, sliced
Pour pineapple juice, seltzer, and rum into a glass. Stir and add mint and a squeeze of lime. Serve chilled.
