‘Tis the season for Friendsgivings, Secret Santas, gift exchanges, cookie swaps, etc., meaning everyone’s schedules are likely filled to the brim with little time to spare. A few weeks ago, I decided to start the party early and have a few of my besties over for snacks + cocktails. It was the perfect Saturday afternoon and a great way to kick off the holiday season…without competing for time on each other’s calendars :)
We had fruit (with the yummiest dip!), cheese and crackers (duh), meat (go to Trader Joe’s for the best selection), bread, and of course, something sweet. A huge thank you goes to Shari’s Berries for sending over the most delicious champagne chocolate covered strawberries (they were amazing!). They made the whole afternoon pretty no-fuss, especially since chocolate covered strawberries with glitter just looked so good with these cocktails. It’s all about the aesthetics, right?!
The champagne cocktail is one I’m planning on serving on repeat…it’s easy, requires minimal ingredients, and is really festive. Also, if you don’t already, I highly recommend making your own simple syrup. It’s easy to Google any flavor and aside from the cooling time, is pretty quick to make.
Cranberry Champagne Cocktail
- 2 bottles champagne or sparkling wine
- 10 oz cranberry juice
- 5 oz cranberry simple syrup (see link to instructions below)
- 5 clementines (or a generous splash of orange juice)
- Orange peel or cranberries for garnish (optional)
Make the cranberry simple syrup and refrigerate until completely cooled.
For each drink, pour 6oz champagne, 2oz cranberry juice, and 3 tablespoons simple syrup, and the juice of one clementine into a glass (you could use oranges, too, but I wanted a bag of clemmies to last me the week…orange juice also works in a pinch). Stir well to combine.
Break the peel from the clementines into small pieces (bonus points if you peeled it in a neat spiral) for garnish. You can also toss in some cranberries from the simple syrup recipe. Serve chilled.
