Sooo I may have found the healthiest dessert alternative…sorry in advance for the potential addiction. You might want to stock up on some little plastic baggies because you’re going to want to portion these out immediately to prevent yourself from scarfing down the whole batch!
I first made a variation of these oatmeal chocolate chip peanut butter bites a month or two ago in the midst of my health kick (which I’m proud to say I’m sort of still on, minus the Papa Johns I ordered last night and some mini desserts…). They were supposed to satisfy my “dessert after every meal” craving for lunch time, and they did–– trips to the office candy jar were practically non-existent!
These bites are naturally delicious, but are also packed with filling ingredients that I’d imagine make them great energy boosters before a workout or as an afternoon pick me up. The peanut butter, oatmeal, and chia seeds balance out the chocolate chips and honey for a perfect sweet + savory combination. I may try incorporating dried cranberries or blueberries into my next batch…it’s easy to play around with the ingredients as long as you have the right amount of oatmeal + peanut butter to properly bind everything.
Oatmeal Chocolate Chip Peanut Butter Bites
Makes about 16 bites
1 heaping cup old fashioned oats
1/2 cup peanut butter
1/2 cup chocolate chips
1/4 cup honey
1 teaspoon vanilla
1 tablespoon chia seeds
In a large bowl, mix together all ingredients until well-combined––you’ll likely have to use your hands.
When ingredients are combined, grab a small handful and roll mixture into small balls. If its too sticky and hard to roll, gradually add a few oats and a tablespoon of peanut butter until you get a consistency that’s easier to shape.
Arrange the balls on a plate or baking sheet and refrigerate for at least 30 minutes. I leave these in the fridge for up to a week and a half (portioned out into baggies of two so they’re easy to grab and go!).
