Guys, it’s freaking hot. I’m back from Charleston today and it’s true what they say–this time of year over there is rough. Being born and raised in Dallas does nothing for my tolerance of these August days! But naturally, aside from lots of cold water (gotta stay hydrated!), a refreshing, chilled cocktail is more than welcome at this time of the year.
Mangos are hands down my favorite fruit, but I’ve had some pretty terrible mango cocktails. I think it’s generally has to do with the consistency of the mango and the potential grittiness if you’re making it from a fresh fruit. Luckily, Trader Joe’s makes this wonderfully sweet (but not too sweet) mango lemonade that was the perfect base for a mango spritzer. I used seltzer to add a little carbonation (I like adding that splash of club soda or seltzer for hydration purposes. It clearly does very little, but a little fizz is always welcome!). If you aren’t near a Trader Joe’s, many juice companies make similar items. You can also try making some from scratch…this recipe looks delicious and easy enough to throw together!
Mango Lemonade Spritz
Makes one cocktail
– 6oz mango lemonade (I used this from Trader Joe’s)
– 2oz seltzer water or club soda
– 1.5oz vodka (I used Titos)
Combine all three ingredients and serve over ice. Cheers! (So easy I almost feel guilty calling this a recipe…).
