Due to a typical craving for pizza but a lack of dough or crust, I decided to take the tortilla pizza route. It’s taken me a few unsuccessful attempts in the past to get the tortilla crispy and solid to hold all the toppings, but I finally got it down this time. I made two servings worth, but the same recipe can be adjusted pretty easily.
Tortilla Black Bean & Corn Pizza
– 2 tortillas
– olive oil
– 1/4 onion
– 1/4 green pepper
– 2 handfuls of spinach leaves
– three tablespoons of corn (I used the kind that’s frozen and then gets microwaved- super easy)
– three tablespoons black beans
– marinara sauce
– six tablespoons shredded cheese
– oregano (optional)
Preheat oven to 325°.
Chop onion and peppers and saute on medium with a teaspoon of olive oil. Once peppers and onions are have been cooking for two minutes, add spinach.
Lightly brush or drizzle olive oil onto tortilla (I used a spoon).
Add marinara sauce. Use about two tablespoons worth on each tortilla, making sure not to drench it completely or it might get soggy.
Top with black beans and corn.
Add some of the cheese…
Top with sauteed veggies.
Add one more layer of cheese before baking for 7-8 minutes.
Topped with oregano!
