Ok, first off, I’m going to be completely transparent about where this post came from: the recipe was partly inspired by a Buzzfeed video. My roommate saw something about a pizza grilled cheese and my first reaction was wondering why I hadn’t already thought of such a delicious concoction. My next instinct was to plan a recipe post for this week…so here we are!
Let’s just say this is your “unconventional pizza grilled cheese,” if there even is such a thing. It looks a little less messy and tastes a little more gourmet. I made a game time decision to make these open-faced, but you could totally put two pieces together, push down lightly, and make a traditional gooey grilled cheese. Bonus points for tossing into a pan with a little olive oil to further melt the pieces together!
Anyone else live off of easy recipes like this during the week? I know I’ll buy lunch or dinner if what I have at home isn’t appetizing enough…tell me you have the same problem?
Open-Faced Pizza Grilled Cheese
Makes 2 servings/4 open-faced sandwiches
- 4 slices wheat bread (I used Trader Joe’s Whole Wheat Tuscan Pane)
- 1/2 cup marinara sauce
- Desired amount of cheese, veggies, pepperoni, or any additional toppings (I used a shredded three cheese blend, sliced mozzarella, a bell pepper blend mix, and pepperoni)
- Oregano or fresh basil for topping
Set oven or toaster over to 450°F
On a separate surface, evenly spread two tablespoons of marinara sauce on one side of each slice of bread. Evenly arrange cheese, followed by fresh toppings.
Bake for 6-8 minutes, give or take, until cheese is fully melted. Remove from oven and top with dried oregano or fresh basil. If you’re going the traditional sandwich route, immediately put the two slices of bread together, toppings facing in, and gently push down. Toss it in a pan with a dab of olive oil and heat on low until cheese and topping have fully melted together.
