How were your weekends? I got back to DC from NYC yesterday afternoon (I was visiting college friends) and could definitely use another weekend from my weekend! It was basically an eating marathon–we hit Rubirosa (my favorite pizza), Blue Ribbon Fried Chicken, Polo Bar (finally–it’s amazing), and Jackie and I brunched at Prune! We also went to a comedy show on Friday night and stayed out later than I had in awhile–it was really fun and but I’m definitely grateful for a low key week ahead. Also, we walked over to the new Hudson Yards mall + Vessel…the whole thing is insane! The crowds were no joke but it’s crazy to see how quickly that part of the city has developed in a mere three or four years.
Despite waking up to temperatures in the 20s this morning, spring temperatures are practically here and I always gravitate towards refreshing gin cocktails when it’s warm out. We usually buy a case of sparkling water each week and my favorite as of late has been Waterloo–the flavors are more pronounced than La Croix and I think it’s more bubbly! This cocktail is incredibly simple to throw together as long as you have the ingredients on hand, and you could also easily make a large batch if you’re hosting and don’t want something too involved. If gin isn’t your thing, vodka would be great, too…just beware, it’s very drinkable ;)
Watermelon Gin Cocktail
- 1 can Waterloo Watermelon Sparkling Water
- 6 oz gin (I used Junipero)
- Splash simple syrup (to taste)
- Sliced limes
Fill a glass (ideally a rocks glass) with ice.
Pour 3oz (two shots glasses) of gin into the glass and add approximately half the can of sparkling water.
Top off with a splash of simple syrup to taste. Don't use too much initially–you can always add more but I didn't need much.
Squeeze in juice from half a lime and stir thoroughly. Serve immediately!
