
I’m back with another round of what we’ve been cooking during social distancing! If you missed the first post, you can catch up here.I’ve loved seeing what people are making–from the super simple down to the more involved concoctions–so maybe you do, too! These are only dinners…we’ve been doing really simple things for lunch like sandwiches, quesadillas (a great way to use up veggies), and leftovers. They’re all low quality iPhone pics snapped right before sitting down to eat but that’s a reality I’m embracing for now :)
Pasta with pesto and parmesan with balsamic roasted brussels sprouts

Trader Joe’s Cauliflower Gnocchi with red sauce and Wegmans frozen grilled veggies

Pasta with marinara and fresh parmesan
Lemon Butter Panko-Crusted Cod (recipe from Lucy) and honey roasted carrots with feta
Half Baked Harvest Thai Peanut Chicken Peanut Ramen
Corn salad, Whole Foods frozen samosas, and roasted carrots with homemade chimichurri
Frozen chicken nuggets, fries, and corn salad with a side of chimichurri mayo
Alison Roman’s Creamy Cauliflower Pasta with Pecorino Breadcrumbs
Salmon with chimichurri, arugula, roasted tomatoes, and brown rice
