Mini Chipotle Mayo BLTs

Servings 20 mini sandwiches


  • 20 mini hamburger buns, sliced in half if they aren’t already (we got them at Trader Joe’s; you could also use mini slices of toast)
  • 1 package bacon package bacon, baked
  • Romaine lettuce, washed and torn into ~3×3″ pieces1
  • 1 large tomato, sliced thinly
  • 1/2 cup mayo (I used light)
  • 1-1.5 tsp chipotle chili powder (use 1tsp if you want it less spicy, 1.5 if you really want it to have a kick)
  • Toothpicks


  1. Open up buns and line them up for easy assembly. Set aside. In a bowl or measuring cup, mix chipotle chili powder with mayo and stir until well-combined (make sure you scrape down everything from the sides, too).

  2. Tear bacon pieces in half and set aside. Spread a generous layer of mayo on one side of each open bun, and add lettuce (fold it over in half if it’s too big), followed by a small piece of tomato (you may want to cut them in half, depending on how large the tomato is–this is what I did), and a half piece of bacon. If the bun doesn’t look overstuffed, add a second half piece of bacon. About half of mine had one piece, and the other half had two.

  3. Add the top of the bun and use a toothpick to secure–there’s no way mine would have stayed put without them!

Recipe Notes

* We used this recipe for baking bacon.
* To take things to the next level, you could toast the buns beforehand. Yum!
