Open up buns and line them up for easy assembly. Set aside. In a bowl or measuring cup, mix chipotle chili powder with mayo and stir until well-combined (make sure you scrape down everything from the sides, too).
Tear bacon pieces in half and set aside. Spread a generous layer of mayo on one side of each open bun, and add lettuce (fold it over in half if it’s too big), followed by a small piece of tomato (you may want to cut them in half, depending on how large the tomato is–this is what I did), and a half piece of bacon. If the bun doesn’t look overstuffed, add a second half piece of bacon. About half of mine had one piece, and the other half had two.
Add the top of the bun and use a toothpick to secure–there’s no way mine would have stayed put without them!
* We used this recipe for baking bacon.
* To take things to the next level, you could toast the buns beforehand. Yum!
